Jammy Egg Smashed Avocado Toast
This is a weekend brunch go-to; simple, satisfying, easy and vegetarian. Serves 1

1 slice sourdough bread, toasted (run to your local bakery for the best sourdough)
1 egg (my favorite are True Blues)

-
Once the egg is cooked, place it in a bowl of ice water and allow to cool for 2 minutes. Discard the ice water and peel the egg.

Labneh with Beets, Blood Orange and Crispy Smashed Peewee Potatoes
This one is for the labneh fans out there! Labneh is a popular Middle Eastern; Mediterranean dairy product and is considered a healthy food. It is a great source of protein, calcium, and probiotics, which benefit gut health. The flavor profile on this is off the charts! Bright citrus, sweet, tangy, savory, crunchy and a tad bit spicy with Spicy MorSalt – this dish has it all! Serves 2-3
Ingredients
1 cup Labneh; my favorite brand is Karoun
Steamed and Peeled Baby Beets
3 Blood Oranges
6 Peewee Potatoes*
2 Tbsp. Organic Extra Virgin Olive Oil (EVOO)
1 Tbsp. Red Wine Vinegar
Spicy MorSalt (just a pinch)

-
To prepare your dish, rinse the peewee potatoes and put them in a microwave-safe bowl. Microwave on high for three or 4 minutes. (Alternatively, if you don't want to use a microwave, place them in boiling water for about 15 minutes, or until they are soft and can be easily pricked with a fork; drain in a colander).
-
Gently smash each peewee potato with a fork and place in a sauté pan (on medium heat) with a drizzle of EVOO. Pan fry each side for about 4 minutes. Set aside.
-
Make the dressing; whisk together the EVOO and Red Wine Vinegar. Set aside.
-
Slice the blood oranges into 1/2 inch thick slices and cut the beets into wedges. Toss them (in separate bowls) with some of the dressing.
-
Spoon and smear the labneh across the plate, this will form the bottom layer. Arrange the blood oranges, beets and potatoes on top. Finally, finish with Spicy MorSalt.
